Acid reflux, or gastro-oesophageal reflux disease (GORD) is a common problem estimated to affect approximately 1 in 5 people on a weekly basis and 1 in 10 people on a daily basis.
Diet is a major contributing factor, but with increasing working days and easier access to fast food, avoiding high fat foods can be difficult.
Crispy Parsnip Fries
The high oil content of deep fried traditional chips or fries can result in a lot of acid reflux symptoms for many people, but those crispy, golden fries can be so hard to resist! Luckily, on an acid reflux diet you can enjoy something just as tempting – but far less likely to cause any discomfort after eating. Read on for a great twist on this classic favourite.
These crispy parsnip fries are oven cooked, maintain all the tantalizing crunch and flavor of traditional fries but with a far lower oil content. This means that they are less likely to trigger any acid reflux symptoms.
Easy to make, they can be prepared just before a meal, or even as a snack when you’ve got a craving! Best enjoyed fresh out of the oven
(Remember that these do tend to get soggy when left overnight, so enjoy them while they’re fresh.)
- 2 large parsnips (450g)
- ¼ tsp salt
- ¼ tsp dried rosemary flakes
- fresh ground black pepper
- olive oil cooking spray
- cold water and ice cubes
- Preheat the oven to 200 degrees Centigrade.
- Wash and peel the parsnips, removing the tops.
- Cut into chunks, the size and length of traditional fries.
- Place into a bowl of iced water and soak.
- Drain the parsnips and pat them dry with a kitchen towel.
- Place into a bowl and add the salt, pepper and rosemary seasoning.
- Toss well until they are evenly coated.
- Place onto a non-stick baking tray, evenly spaced.
- Spray lightly with the cooking oil spray.
- Bake for around 20-30 minutes, turning at intervals of 10 minutes to ensure they are evenly cooked.
- Serve immediately.
